Aging: 9 months
Vinification: Cold soak for 3-5 days before fermentation.
Hand punch down & pump over 2-3 times per day during a
slow 14 day fermentation with light tannin extraction. Wild
yeast is used to increase the complexity and mouth-feel.
Winemaker's Comments
One of the most widely planted varietals in the world, Carignane is known for its deep, plum color and strong tannin structure. Our Carignane comes from a small 5-acre family grown vineyard in the Redwood Valley where the vines are over 60 years old. This region has hot summer days with slightly cooler nights, which is excellent growing conditions for Carignane. The result is a wine rich and full-bodied with flavors of blackberry, blueberry, plum, dark chocolate and vanilla. Smooth with layers of texture that lingers into a smooth, lively finish.
