Winemaker’s Comments
Flavors of bright red candied cherry and dried cranberry introduce a palate of herbaceous cherry, cocoa, and Tahitian vanilla. The finish of lingering, velvety tannins is accompanied by black cherry and dark cocoa. Enjoy with center cut short ribs braised in a red wine reduction sauce accompanied with a bold butternut risotto. This fuller body style of wine will age for a number of years when stored properly, but is also enjoyable in its youth.
Cabernet Franc
Cabernet Franc is lighter than Cabernet Sauvignon (of which it is a parent), contributing elegant finesse and an often peppery perfume to blends with more robust grapes. Depending on growing region and the style of wine, additional aromas can include tobacco, raspberry, and cassis, sometimes even violets and other herbaceous qualities. The Cabernet Franc wine's color is bright pale red. Cabernet Franc and Cabernet Sauvignon can be quite difficult to distinguish. Sometimes the French refer to Cabernets, which could mean either of the two grapes.
